“My name is Dustin Valette. I'm the chef/owner of The Matheson, Valette and now Valette Wines. Sonoma County is hospitality at its core. This was founded back 150 years ago by immigrants from Italy and France. They came out here because they wanted to find the new Decazeville, where my great-grandfather's from. They wanted to find the new Sicily. And what hospitality is, is us showcasing our way of living. It's us saying, ‘Let's have a glass of wine with lunch. Let's have a really cool artisan-produced charcuterie from Journeyman Meats. Let's have an amazing cheese from Bohemian Creamery.’ This really is a culmination of artisan craft-makers all coming together, really saying, ‘This is who we are.
