“At Psychic Pie we make a Roman style pizza that we sell by weight. We try to bring in as many local products as we can onto our pizzas and have close relationships with a lot of farmers around here. They have really taken a focus on gearing their entire food and beverage program towards super local produce, meats, cheeses, even our beers and wines. What we’re trying to do is create a restaurant experience where we can be good stewards of the land and not have to own a huge farm. They can be right here in this little shop and show people that they can source differently, that they can eat locally, and that they can really help the environment.”
